do NOT make your all time favorite cookie on a day like this...
it's bad...very very bad.
Brown Sugar Shortbread:
1 c. butter, softened (NO subs)
1/2 c. packed brown sugar
2 1/4 c. all purpose flour
cream butter and sugar, gradually add the flour
turn onto a lightly floured surface and kneed until smooth, about 3 min.
Pat into a 1/3 in. thick rectangle measuring 11x8 in.
Bake at 300 for 25 min or until bottom begins to brown
Cool for 5 min.
Cut into rectangles (or squares or triangles if you must be that creative)
remove to wire rack and cool completely.
OR: cut them in the pan, straight from the oven, blow for a few seconds to cool off, take a bite and swoosh down with a swig of coffee/tea/hot chocolate.....
I feel better already.
Until I remember what's in these and just how many of them I ate.

actaully if you think about it...they are all natural ingredients, so your body can digest them easier. Much better that store bought stuff containing all kinds of preservatives. I've used that logic before (but for a pumpkin pie!)
